700g fresh carrot juice 400g fresh orange juice 370g passion fruit juice 50g sugar 50g ginger,peeled 12g salt 140g whole milk yoghurt			1100g cherry puree 370g fresh lemon juice 4 tellicherry black peppercorns, ground fine 100g sugar 12g salt 140g whole-milk yoghurt 300g water

METHOD

Puree all ingredients until smooth.
Pass through a chinois, pushing for total extraction.
Serve extremely cold in chilled shot glasses.
If ordered à-la-carte, serve in regular juice glass.
